Introduction:
This course is for adults who wish to train/retrain as a professional chef, and develop skills that will enable them to gain employment in a busy restaurant environment. It is a full Level 2 qualification.

Study Mode & Location:
This course can be studied as a part-time course (over 1 year for 6.5 hours per week) or as a one year Part-Time+ course. It will be held at Preston College, Fulwood Campus, St Vincent`s Road, Preston, PR2 8UR.

Course Content:
The Graduate Chef programme is offered over a period of one year. It is an intense programme and in the main is practically based. Part of the programme does include the relevant theory to reinforce the practical sessions.

A total of 14 units are required to successfully complete the programme. Each unit is broken down into a number of assessments that are relevant for that particular unit. The course includes the following units:

  • Cook & Finish Basic Soups.
  • Cook & Finish Basic Sauces.
  • Preparation of Meats.
  • Preparation of Fish.
  • Hot & Cold Desserts.
  • Preparation of Basic Pastry.


Assessment:
Assessments take place in a realistic working environment (RWE) where you will be preparing and cooking the food that is served in the College`s on site Restaurant, Vincent`s. During the course you will become familiar with the assessment process and eventually take control in the planning of your own assessments, where you will put together a portfolio of evidence.

Careers & Progression Opportunities:
Successful completion of the programme within the given time frame will lead to employment within the industry or to a place on the NVQ Level 3 programme.

Part-Time+ Route
You will need to complete a Further Education Application Form. These will be available from mid-May.
Many courses have limited places so please return your application form as soon as possible. Following acceptance of your application, the earliest you may enrol is mid-June.

You will need to have an informal interview with a Adult Admissions Adviser.

Depending upon your circumstances, you may be able to study for FREE or at a reduced price.

Part-Time+ Course Benefits
