In this course, students learn to produce a wide variety of classic and modern French cakes or ‘entremets’, mousses, cakes, bavarois suitable for large or small scale productions, using the latest assembling techniques and cost effective production methods. Students will utilize updated methods of traditional French recipes using fresh ingredients. The student cakes in this course will represent a variety of textures and flavours and present new opportunities for combining those elements in cakes.

About this course

- The student will learn to produce a wide variety of classic and modern French cakes suitable for large scale productions, using the latest assembling techniques and cost effective production methods. - The student will learn how to bake sponge cakes and create buttercream fillings. - The students will learn how to highlight their cakes with decorations such as silkscreens, printed logos and chocolate and sugar decorations. - The student will learn how to use updated methods of traditional French recipes maintaining high quality by using fresh ingredients. - The student will learn how to make a variety of French cakes having multiple tastes and textures. - The student will learn how to make a variety of French tarts practising several different types of crusts, doughs and fillings.

Age Requirements: Students must be a minimum of 16 years of age to enroll in cooking classes. For those younger than 18 will need a parent or guardian as a guarantor

Level of English Language: If English is not your first language, you must demonstrate an intermediate English language level.
