Course programme
You will learn and develop skills in patisserie and confectionery including:
Hot and Cold Desserts
Biscuits, Cake and Sponge Products
Fermented Dough Products
Pastry Products
Basic chocolate and confectionery skills
You will also learn a number of generic subjects including:
Investigate the hospitality and catering industry, employability and workskills
Food Safety, Health & Safety and Nutrition.
Catering Operations, Costing and Menu/Product Planning
You will also complete a further additional qualification: L2 Award in Food Safety
If you have not achieved a grade C in English or Maths you will have the opportunity to further improve these skills You will build skills to allow you to successfully complete your programme of study and progress either to a higher level or into employment. To assist you with this as part of your programme you will complete a work placement. You will have the opportunity to work within the regional area, nationally or aboard, for example in 14/15 students are completing placements in France, Italy, Finland, Iceland and Germany. Students are required to have an interest in the subject. On successful completion of this programme you can progress onto the following programmes:
