The course is also suitable for people with some intermediate knowledge of cake decorating, to fine tune and develop those skills with sugarpaste and developing the art of using royal icing.

Course programme

What You will study

You will work in our fully equipped kitchen and create three cakes for assessment, as well as creating a portfolio of theory evidence and cake designs. During the course you will:
• Produce a round cake that is coated with sugarpaste and includes modelling figures/characters, crimping, embossing, piping lettering, and finishing.
*Produce a square cake that is coated with sugarpaste and includes modelling figures/characters, crimping, embossing, piping lettering, and finishing.
• Produce a round cake that is coated with royal icing and includes piped flowers, graduated line work, S and C scrolling with over piping, lettering and stencilling.
• Design and create a selection of biscuits and cakes finished with various coatings. These will include chocolate ganache/ truffle, fondant, glace icing, buttercream and chocolate
*Modelling with marzipan and sugarpaste, where you will create a minimum of four models on themes on your choice.
