The figure of the biotechnologist works in the field of biotechnology, a branch of biology concerning "the use of living beings in order to obtain goods or services useful for satisfying the needs of society", but also the application and study of any technology developed or developable by man to the field of biology. In everyday language, the term in the plural (biotechnologies) is used more frequently to indicate the plurality of technologies developed and the relative fields of application. Biotechnologies represent one more method available to agriculture: since they make it possible to insert specific genes into plants, even from very different species, whose function is known to transmit information in subsequent generations. Genetic improvement is therefore nothing more than a system for optimizing natural selection and increasing yield and resistance to disease. Biotechnologies are not an invention strictly linked to our times, but have originated and used for many centuries for the fermentation of wine and beer or for leavening. There are applications which, while not using microorganisms, are classified as biotechnological.
