Catering and hospitality makes an enormous contribution to the UK economy – over £90 billion a year. It is the country’s fifth biggest employer with over 2.5 million people working across circa 200,000 establishments in the sector. That’s 8% of the national workforce. This is a contemporary and lively sector with lots of different sized operations from restaurants, pubs, bars and nightclubs, to events like film premieres and festivals.This is a young and vibrant sector – a third of the workforce are aged 25 or under. There are several professional avenues for you to consider whether you’re thinking of starting a career working either behind the scenes as an up-and-coming chef or in a front-of-house role running a busy restaurant. We will help you towards landing your dream job in the sector, whether this be a sous-chef, a restaurant manager or even a chocolatier.Beyond high-street restaurant chains and hotels, catering staff are required to produce food for other industries like businesses, the armed forces, hospitals or even cruise ships. Course programme
All programmes are run from our newly redeveloped Hitchin Campus. You will sharpen your skills in our modern training kitchens and then put them into practice by serving real customers in our commercial restaurant, HART Kitchens. You will also be able to gain work experience at sector placements or at the numerous large events, functions and formal dinners that take place throughout the year at the College.
A career in catering and hospitality also includes a number of other skills which will be taught to students at NHC, including customer service, stock management and event planning, all of which can be gained through work experience at NHC kitchens and other external partners. You’ll receive outstanding tuition and support from our experienced tutors as well as advice and networking opportunities with visiting chefs and guest speakers from the worlds of gastronomy and hoteling.
- Catering: in catering programmes you will learn in depth about food preparation and cookery, in terms of health and safety, use of kitchen equipment, cooking for larger numbers of people, nutrition, food hygiene, serving food and drink as well as good communication and customer care.
- Hospitality industry: in programmes that focus on the catering industry, you will look more closely at the different features of the hospitality industry – from hotels to restaurants. As well as food hygiene, health and safety and serving food and drink, you will also study how establishments are run and ensure top-quality customer service.
- Professional cookery: professional cookery further develops your basic catering skills by looking more closely at kitchen workplace skills, costing and menu planning, healthier food and special dietary requirements, practical gastronomy for fish, vegetable, meat, poultry and game dishes, and bakery and pastry skills to produce petits fours, biscuits, cakes, sponges as well as hot and cold desserts.
- Food and beverage service: food & beverage programmes look into the supervision of food and drink preparation, food safety for catering, promotion of food and beverage services and products. You will also learn about customer service in hospitality, leisure, travel and tourism, how to supervise hospitality events as well as the legal and social responsibilities within the sector.
