Course programme
The Award in Food Safety is validated by the Chartered Institute of Environmental Health (CIEH) and is a nationally recognised certificate that can be delivered in a day.
Overview:
In response to the requirements of the Sector Skills Councils and the Qualifications and Curriculum Authority (QCA), the CIEH have launched new sector-specific Level 2 Awards in food safety, which replaces the CIEH Foundation Certificate in Food Hygiene.
The CIEH Level 2 Awards in Food Safety have been designed to address the food safety needs of the catering, manufacturing and retail sectors.
Programme content:
The following key areas are covered during the programme:
• Legislation
• Food safety hazards
• Temperature control
• Refrigeration, chilling and cold holding
• Cooking, hot holding and reheating
• Food handling
• Principles of safe food storage
• Cleaning
• Food premises and equipment
Assessment:
Assessment is via a multi-choice examination (30 minutes maximum) for which the Chartered Institute of Environmental Health will issue a certificate to successful candidates who achieve the required level of assessment.
Duration:
One-day programme (including assessment)
