HNC Professional Cookery

Course Aims:
This course gives you the opportunity to develop your culinary skills to an advanced level whilst providing the underpinning knowledge necessary to operate at supervisor level.

Course Content:
Production Cookery: Hot & Cold Kitchens; Sweets & Desserts
Food Classification & Purchasing
Hospitality Supervision
Food Hygiene
Hospitality Financial Control Systems

Progression Opportunities:
On successful completion, students could apply to year 2 of HND Professional Cookery.

Career Potential:
Possible areas of employment include; hotels and restaurants, special event catering, commercial catering, airline and cruise ship catering and hospital catering.

Course Assessment:
The course is assessed in the college¿s realistic work environment, where students get the opportunity to cook food for a fine dining situation. Students are encouraged to apply practical skills to project and theory-based assessments. Where practical training suites are not available, case study assessments are based on real industrial establishments.
