Paul Bradford
Cake Designer
Paul Bradford has a wealth of experience. He heads up a team of designers, annually makes cakes for royalty in the UK and in April 2010 made a cake for Prince Albert of Monaco in front of 100 Italian Cuisine students. He has a passion for teaching and explains a lot more than simply the course syllabus.

Time: 9.30 am - 5pm

Elephant - Lesson plan
- 9:30am - 9:45am - Introductions, food hygiene, health and safety
- 9:45am - 11:00am – Cutting out and shaping the Elephant
- 11:00am - 12am - Covering the Elephant and icing the drum
- 12am - 1pm - Lunch with Paul
- 1pm - 1:15pm - Transferring cake onto iced drum
- 1:15pm - 2pm - Adding the body parts
- 2pm – 4pm – Decoration and piping
- 4pm - 4:45pm - Finishing magical touches
- 4:45pm - 5pm - Wipe down and group picture
