Course programme

The programme will provide you with an opportunity to enter a career in food and beverage, accommodation, reception, hospitality and has strong links to careers in leisure, travel and tourism. If you enjoy meeting new people and working within an exciting fast-moving environment and ever-growing industry then this programme is for you. Your programme will involve practical work in our kitchens and restaurant. Theory will take place in a classroom environment. You will work in groups for practical but you may be required to complete some assessed coursework, either individually or working in pairs. The programme also includes a compulsory two week work placement each year. As part of the programme, you will complete a range of coursework and practical tasks. You will also learn off-site, by visiting establishments in the industry and completing an off-site assessment. You will learn both kitchen and restaurant skills through practical application when you prepare and cook a range of foods in our kitchens and serve in our restaurant. You will complete during the two year programme: -BTEC Extended National Diploma in Hospitality and Catering -Food Hygiene Certificate -Work Placement - Two week placement per year Below are some of the units you will be studying as part of your programme over two years: -Hospitality industry -Principles of supervising customers -Customer service -Financial control -Supervisory skills -Principles of food safety -Supervision for catering -Food and drink service -Marketing for hospitality -Personal selling and promotional skills -Accommodation operations in hospitality -Human resources -European food -Contemporary world food -Asian foodYou will be continually assessed through coursework and completion of work related projects. You can achieve Pass, Merit or Distinction for any of the units that you will be completing as part of your qualification. Your coursework will also contain practical elements for the following units: alcoholic beverage service, food and drink service, supervisory skills in hospitality and accommodation operations, world food, European food and Asian food. The programme is assignment based with a practical and applied focus to learning. The programme will include two weeks work experience per year which is considered essential. Successful completion of Year One will automatically achieve the 90 Credit Diploma qualification.
