Who is this course for?

This CHEF programme is an internationally recognised qualification designed to enable full-time students to gain two NVQ qualifications simultaneously in addition to a Level 2 Food Safety Award over two years, depending on ability. It is a modular based programme which allows students to progress at their own pace.

How long is this course for?

What will I study?
Professional cookery students will complete a range of units from below as required by the awarding body for the qualification.
  • Safe, Hygienic and Secure Working Environment
  • Teamwork
  • Vegetables / Hot Sauces / Food Safety / Soups / Fish / Pastry / Meat / Hot and Cold Desserts / Poultry / Dough / Stocks

Food and Drink Service students complete units in:
  • Safe, Hygiene and Secure Working Environment
  • Teamwork
  • Customer Service
  • Dealing with Payments
  • Preparing the Bar Area
  • Preparing the Restaurant Area
  • Serving Food at Table
  • Food Safety

Industrial work placement is an integral part of the course, invariably providing the opportunity for part time work, and has resulted in 100% employment for students.

How will I be assessed?
Students gain expertise and are continuously assessed in the production and service of food to a high standard in several ultra-modern kitchens and restaurant facilities.

What can I do after the course?

This course prepares students for a wide range of jobs including chef, food service personnel and bar persons in hotels, restaurants and contract catering and the opportunity to travel within the catering industry to world-wide hotels and restaurants.

Successful students can also continue their studies to NVQ Level 3 or BTEC National Diploma in Hospitality Supervision. An NVQ Level 2 in either Professional Cookery or Food and Drink may be undertaken through an Apprenticeship Training Programme
