Overview At a glance Gain this qualification to have the skills and knowledge to be confident in a range of kitchen functions and activities. Work would be completed in different hospitality businesses like restaurants, hotels, catering operations, clubs, pubs and cafeterias where food is prepared and served. This program can be completed as part of a traineeship. This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills. They are involved in mainly routine and repetitive tasks and work under direct supervision. This qualification does not reflect the skills required by commercial cooks. Those skills are reflected in SIT30813 Certificate III in Commercial Cookery. This pre-apprenticeship course offers a pathway into a full time apprenticeship.Participants who complete the course successfully, often progress into a Chef's Apprenticeship. This qualification will provide you with the practical skills and knowledge needed to work in a commercial kitchen. The SIT20312 Kitchen Operations qualification provides basic cookery skills, and is regarded as an entry level qualification as a cooks assistant, kitchen hand or an apprentice chef. Students wishing to undertake an apprenticeship in the trade of cookery need to do the SIT30813 Certificate III in Commercial Cookery.
