Degree Programs at the School of Artisan Food
The degree programs not only train students in a range of artisan foodmaking techniques, but also offer them the skills necessary for successful careers in the artisan food world.
Students may specialize in bakery, cheesemaking, butchery & charcuterie, or brewing, and they may take classes in any of these. Practical training is consolidated through work placements, arranged by SAF, with artisan foodmakers throughout the United Kingdom, and beyond.
Classes in the history and contemporary social sciences of food give students the opportunity to develop a unique appreciation of the significance of artisan foods in today’s food world, while classes in artisan food business and management prepare students for rewarding livelihoods in their chosen craft.
The School of Artisan Food offers two undergraduate degree pathways. The Foundation Degree (FdSc) is a two-year course. Students take 240 credits (16 modules). Each module lasts only one week, with sessions in the morning and in the afternoon, Monday through Friday. Assessment takes a variety of forms, including practical exercises, oral and written examinations, reports, essays, and projects.
Students may complete the Bachelors Degree (BSc) by taking an additional 120 credits during a third year of study. This includes a Capstone Project under the supervision of a SAF instructor, such as a thesis on a particular artisan technique or tradition or on a particular issue in the artisan food world, or the development of a plan for an artisan food business.
Upon completion of a SAF degree program, students may find employment with existing artisan food producers, or they may set up their own artisan food businesses. Others may work in artisan food distribution or retail, or in restaurants featuring artisan foods. Graduates may also pursue careers in food journalism with a focus on artisan foods.
