Course programme

Course Content

To prepare you for a career in this increasingly competitive sector, the course consists of both practical and theoretical based modules. These will enhance your knowledge and skill set in the area of consumer management and food innovation. Practical modules include Food Studies and Nutrition, Product Development, Food Innovation, Food Design and Retail and Food and the Media. These modules seek to develop skills in innovation, sensory analysis, problem solving, teamwork, design and technology. Theoretical based modules focus on the area of consumer management and include Consumer Behaviour, Consumer Law, Consumer Marketing Management, Contemporary Consumer Issues, Contemporary Food Policy and Human Resource Management. These theoretical based modules will develop global and commercial awareness as well as your key employability skills such as organisational ability, communication and time management skills.

The course uses a range of assessment methods combining examinations and coursework to test student learning. Coursework assessment includes reflective portfolios, design portfolios, written reports, essays, presentations and a research paper.

Optional Placement

Diploma in Professional Practice (International) DPP(i)

You have the option to complete a 48 week placement in year three of the course. Through the structured practical experience, placement – at home or abroad – assists in consolidating knowledge and skills learnt during studies and in developing individual maturity, self-awareness and confidence. The satisfactory completion of the placement year leads to the award of Diploma in Professional Practice (International) upon graduation. During this year you undertake additional placement related duties. Some students use this period as an opportunity to travel and work with internationally based companies or opt to be UK based. Placement options can be with commercial companies such as the Moy Park, Marks and Spencer, Dairy Council, Disney World (Florida) and The Big Pot Company or in the area of education such as Consumer Council (NI) and the University of Ulster.

Alternatively you can opt to complete a period of study abroad.

Diploma in International Academic Studies (DIAS)

Alternatively, after two years of university-based work, you can study abroad through the Business Education Initiative. You spend two semesters in an educational institution, which will provide exposure to alternative business cultures and protocols and enhance your personal and professional development. Successful completion of the placement leads to the award of the Diploma in International Academic Studies (DIAS) upon graduation.
