An understanding of the concept of food hazards and risk associated with them. An understanding of the terminology with resoect to supervising food safety. An understanding of the techniques involved in controlling and monitoring food safety. Suitable for: Managers and supervisors in small, medium or large catering businesses. Particularly relevant to those who have to develop or monitor HACCP based food safety management procedures and systems. Those working in an education sector will recieve priority.

Course programme
This 3 day course aims to provide a thorough understanding of food safety procedures emphasising the importance of monitoring staff and controls. The course will take place on Thurs 1, Wed 8 and Tues 13 July 2010 in Cobham, Surrey. Anyone working in a supervisory position in a food business is not only responsible but also accountable for food safety. It is therefore vital that they are equipped with both the knowledge and confidence to do their job effectively.
Those working in the education sector will recieve priority on this course.
