This course/qualification is designed for anyone who supervises work in an area where food is prepared, cooked and/or handled. Food safety training is essential in the preparation and preservation of essential skills in the workplace. It is fundamental in enabling employees to deliver high quality food to customers safely. The CIEH Level 3 Award in Supervising Food Safety in Catering covers the following topics:
  • Legislation
  • Applying and monitoring good hygiene practices
  • Temperature control
  • Workplace and equipment design
  • Waste disposal, cleaning and disinfection
  • Pest control
  • Personal hygiene for staff
  • Contribution to staff training
  • Implementation of food safety management practice
  • Food safety management tools
The course is delivered tutor-led in or around the workplace to suit the needs of the individual employer. Candidates will need to undertake a 60 question multiple-choice exam at the end of the course, where if successful certification will be provided. The course does offer the option of being bespoked to meet the tailored needs of an organisation.
