Course programme

Listed are some of the units that you will be studying on your VRQ diploma programme, these include: Introduction to the catering and hospitality industry Food safety in catering Health and safety awareness for catering and hospitality Introduction to healthier foods and special diets Introduction to kitchen equipment Introduction to workplace skills Preparation and cookery using a range of cookery methods Regeneration of pre prepared food Cold food preparation Understanding menus Dealing with payments and bookings Food and beverage service skills Hot beverage skills, Bar service skills Students will develop a range of skills that will equip them to start a career in the hospitality industry. The course is delivered in our brand new facilities at the Printworks Campus. These facilities provide learners with the knowledge and opportunity to develop their skills and techniques in food preparation and food and beverage service. You will need to have successfully completed a level one programme in Culinary Skills, VRQ level 1 Diploma in Professional Cookery or have up to date industry relevant experience.
