Course programme

Explore the world of cheese, from cheese history to production, trends and global business analysis. Sensory evaluation, classification, ripening, storage, purchasing, service and applications in today’s kitchens are components of this course. Learn strategies for how to best purchase and serve cheese to enhance menu or retail profitability. The principles of beer and wine pairing with cheese are also covered.
