Course description
Who can join?
If you have one Higher or experience of working in the Hotel industry or a relevant SVQ such as Professional Cookery, or Food Preparation and Cooking or a gSVQ qualification
How do I attend?
The course is full time over one academic session or part time over a longer period. In Thurso the course runs from September to June. In Dornoch it is based in Burghfield House in Dornoch which is run as a real working hotel. The course runs from October to April, giving you a unique opportunity to gain experience in the different departments of the hotel. It is also possible to gain this qualification if you are in a suitable job as the copurse has been designed to make attendance as flexible as possible. Start/end dates are different at Thurso and Dornoch: you will be given the dates if your application for a place is successful.
What will I study?
The subjects studied are the same, whether you attend on a full time or part time basis. They cover many aspects of cookery, including hot and cold kitchen production. Also included are other necessary subjects such as control systems, food classification and purchase.
What could I do next?
It may be possible to progress to a Supervisory-level course or the HND Culinary Arts course at another college.
How do I join?
Course Fees for Part Time Students
The units which count towards this qualification are available on an individual basis, making it possible for part time students to gather sufficient units to achieve the award, albeit over a longer period.
You may not have to pay any fees for these units if you qualify for a fee waiver, for instance if you are eligible for certain benefits. See the college's Fee Waiver Policy in the resources area of the website.
It is possible to use a current Individual Learning Account (ILA200) to pay for these units as you come to study them.
Part time students may also possible qualify for the ILA500, which is a £500 grant for students studying HNC, HND, Degree and taught Postgraduate courses. You must study units totally 40 Scottish Credit and Qualification Framework (SCQF) credits or more a year.
