Intro. to Hospitality & Catering L1 Diploma
This is an introductory food preparation course aimed at providing a sound foundation of basic cooking skills on which to build. The content of this qualification is underpinned by the belief that to work as a successful chef in the catering industry it is essential to have a good foundation in a wide range of high quality cooking skills and to be able to apply them across a range of catering contexts. The qualification covers twelve units:

  • Introduction to the hospitality and catering industry
  • Food safety in Catering
  • Health
  • & Safety awareness for catering and hospitality

  • Introduction to healthier foods and special diets
  • Introduction to kitchen equipment
  • Introduction to personal workplace skills
  • Prepare and cook food by boiling, poaching and steaming
  • Prepare and cook food by stewing and braising
  • Prepare and cook food by baking, roasting and grilling
  • Prepare and cook food by deep frying and shallow frying
  • Regeneration of pre-prepared food
  • Cold food preparation

    The Hospitality Awarding Body (HAB).
    Entry Requirements:

    • At least five GCSEs at grades A

      Entry Process:
      All applicants will be invited to an interview with the tutor, allowing you to find out more and check that the course is the best option for you. Interviews normally take place between January and September of the year in which the course starts.

      Assessment:
      Each unit is assessed by a combination of externally set assignments and online multiple choice tests.

      Progression Routes:
      On completion of this qualification learners may progress into employment or onto NVQ Level 2.
