Course description
Who can join?
The Level 1 course is open to all, whether you wish to be a Chef or an Hotel Manager. You do not require to have any previous qualifications or experience to join. To be able to apply for the level 2 course 5 Standard Grades at level 3 or above, or work experience.
How do I attend?
Both courses are full time over one academic session or part time over a longer period. In Thurso the course may run from October to June. In Dornoch it is based in Burghfield House in Dornoch which is run as a real working hotel. This course runs from September to March, giving you a unique opportunity to gain experience in the different departments of the hotel. It is also possible to gain this qualification if you are in a suitable job (see under Work Based Qualifications). Start/end dates are different at Thurso and Dornoch: you will be given the dates if your application for a place is successful.
What will I study?
The Level 1 course is an introductory course will teach you the basics of food preparation and food service. Full time students may have the benefit of a work placement to provide practical experience. For our students in Dornoch, this means attending Burghfield House Training Hotel, the first of its kind in Scotland. Our Thurso students also benefit from the training provision available at the Burghfield.
What could I do next?
You may progress to SVQ Level 2 in Professional Cookery or SVQ Level 2 Hospitality Multiskilled then on to level 3 Hospitality Multiskilled Supervision or Level 3 Professional Cookery.
How can I do this if I work?
With the help of your workplace supervisor and a visiting assessor you will work through the SVQ, recording evidence of your skills and knowledge by undertaking practical assessments and answering written questions.
Practical assessments will be done either by your workplace supervisor or a visiting assessor from the college.
There may be the opportunity to attend college (Thurso and Dornoch) on a day release basis.
