Fish!
Robust gutsy dishes from Italy, and North Africa feature offering a wide variety of fish. Swordfish, bass, tuna, squid, bream monkfish and sardines could be on offer and you will learn how to clean and prepare your fish and then cook dinner using a variety of styles and sauces. Such dishes as risotto nero, Sicilian stuffed sardines, tuna with chermoula and sea bass on saffron potatoes may appear on the menu, dependant always on what’s freshest and best in the market. This is a fabulous hands-on cookery course giving you the opportunity to demystify fish cookery, enabling you to recreate these dishes at home.
