Course review:
The qualification is divided into two units: Principles of Nutrition and Applied Nutrition.
Principles of Nutrition:
v Nutrient requirements: definitions, dietary reference values, major food sources, the effects of processing, cooking & storage.
v Their role in maintaining health: physiological requirements, beneficial and detrimental effects.
Applied Nutrition:
v Principles of nutrition: catering & nutritional requirements, adaptation of recipes.
v Information concerning nutrition: training programmes, presentation of nutritional information.
v Developments in nutrition: recent findings and current issues.
