The wine technician is an agricultural expert specialized in local viticulture and enology. To obtain the title of enotechnician it is necessary to attend (and graduate) in an Agricultural Technical Institute with a Viticultural and Oenological address. After passing the state exam, one passes to specialization lasting 1 year in one of the Agricultural Technical Institutes that present this course. The overall duration of education is 6 years. The wine technician specializes in oenology, a science that studies the transformation of grapes into wine, the grapes suitable for its production, (microbiology, chemistry and sensory characteristics), but also the production process itself, therefore the techniques connected to it (e.g. filtration, pressing, pumping over). Having to trace a time frame in which to frame the objects of study of the oenology, for grapes usually in oenology refers to the period that goes from the herbaceous phase to technological maturity (i.e. the moment in which, by analysis, it is believed that the fruit has in itself the necessary concentrations of substances useful for the pre-established oenological objective, e.g. sparkling wine, ready-to-drink wine, aging wine, passito wine, etc., this moment coincides with the harvest). As far as wine is concerned, enology deals with it from mashing (or vinification of the grapes) to bottling, but also beyond as it also deals with the conservation of the product. Viticulture is fundamental in the production of wine; until a few years ago it was believed that to obtain a good wine it was necessary to take greater care of the work in the cellar;
