Fundamental food hygiene knowledge for all food handlers
Every year outbreaks of food poisoning hit the headlines with people having to be treated in hospital or, even worse, dying. It is estimated that 5.5 million people suffer from some form of food poisoning each year – that's 1 in 10 people. Many of these cases result from food prepared for public consumption.
Qualtech now offers a new comprehensive food hygiene training course, developed by the Chartered Institute for Environmental Health (CIEH). This course is the successor to the well-known CIEH Foundation Certificate in Food Hygiene, which has been completely revised with new and updated content.
CIEH qualifications are highly regarded by businesses throughout the UK and are widely recognised as the benchmark in food hygiene training.
WHO IS THIS FOR?
Food poisoning is normally caused by negligence or ignorance and most experts in food hygiene believe that a reduction in the high level of food poisoning cases will only be achieved by the education of food handlers. The Level 2 Award in Food Safety in Catering has been designed to give all levels of catering staff an appreciation of the fundamentals of good food hygiene practice.
This Level 2 Award is a stand-alone qualification but is also a pre-requisite of both the Catering & Hospitality and Food & Drink Manufacturing Operations Foundation Modern Apprenticeship frameworks.
CONTENT
The course follows a defined syllabus and is of 7 hours' duration. To gain the qualification, participants are required to successfully complete a thirty-question multiple choice paper. Topics covered during the course include:
• Introduction to terminology and concepts
• Legislation and enforcement
• Food safety hazards and risk management
• Temperature control and monitoring
• Refrigeration, chilling and cold holding
• Cooking, hot holding and reheating
• Food handling
• Principles of safe food storage
• Cleaning
• Food premises and equipment
The course is delivered at our fully equipped training facilities in the QED Centre or, by prior arrangement, can be delivered at customers' premises if preferred.
