Course programme
A five day course for the more competant cook who would like to further their studies in Patisserie. The course has been designed for those students who would like to work in the Patisserie Department of a hotel, and either work or open their own bakey/ tea shop.
The course content allows the student to produce a wide variety of Patisserie goods. Students will work individually and as part of a team. Course content covers various types of pastry - savoury - pate brisse - pate sucree and their fillings - fermented goods - Devonshire splits - tea loaves etc; Puff paste - fresh and convenience - meringue goods - egg custard based desserts - gelatine products - cake production to include Torten & Gateaux - garnishing of finished goods for final presentation. Patisserie equipment - hygiene & safety - refrigeration and storage.
The course is 95% HANDS ON and is quite intensive. The cost of the course includes lunch each day, comprehensive recipe file plus accompanying Patisserie theory notes, ingredients, use of all equipment. School Certificate on completion of course.
