To provide food handlers with a fundamental knowledge of food hygiene and to enable them to apply this knowledge to essential practical skills in order to prevent food poisoning. Suitable for: Those handling open food particularly in view of the requirements of the Food Safety (General Food Hygiene) Regulations 1995, which requires food handlers to be trained commensurate to the activity.
