Recognition and breaking down of carcases, cutting, boning, trimming, rolling, tying and packing of products. Manufacturing of Sausages, Burgers and Bacon. Theory topics are designed to proved the essential knowledge and undertstanding relating to the meat industry, Food Safety, HACCP and Health & Safety You will be able to perfect skills within the meat industry, such as displaying products, product development. You will also gain skills in varying methofds of Butchery production and knowledge of Artisan products Assessment is continuous throughout the programme with some written tests and/or assignments and practical observations The course is delivered at the new Printworks Campus, practical sessions take place in an industry standard learning environment. There is also a retail Butchers shop. Students can start or progress their employment in the butchery industry, and/or progress onto the Level 3 programme
