Course Details

This intermediate qualification is designed for those working in all food businesses at supervisory level and who need a better understanding of food hygiene. Owners and managers in small to medium sized organisations may also find this qualification provides them with useful knowledge to do their job more effectively.

Who needs this qualification?

Those with supervisory duties in a food handling environment, for example:

  • one-to-one or on-the-job instructors and trainers
  • customer complaints investigators
  • quality assurance staff
  • buyers and sales staff

Subjects covered

  • bacteriology, physical, chemical and microbial contamination of food and its prevention
  • food storage, temperature control and food preservation
  • design and construction of food premises and equipment
  • cleaning and disinfection, pest control and personal hygiene
  • supervisory management

Outcomes

On completing this qualification candidates will be able to:

Prerequisite:
The CIEH Foundation Certificate in Food Hygiene qualification or equivalent knowledge. Candidates for the qualification will need to have an analytical approach to food hygiene and will be encouraged to demonstrate how they can influence others and positively encourage good standards.
