The aim of this one-day course is to provide knowledge of the fundamental principles of nutrition and the necessary knowledge to effect real change in the eating habits of the nation. Suitable for: All those involved in the selection of menus, recipes and ingredients, especially - caterers, chefs, child care workers, school staff, hospital staff, care home workers, restaurant staff, and hostel workers.

- The relationship between nutrition, diet and health
- The nutritional requirements of different population groups
- Current policy, legislation and voluntary guidelines
- The effects of food processing on nutrient content
- Nutrition labelling
Course Structure
The course is of six hours duration.
Who Should Attend?
All those involved in the selection of menus, recipes and ingredients, especially - caterers, chefs, child care workers, school staff, hospital staff, care home workers, restaurant staff, and hostel workers.
Assessment Method
1 hour exam of 30 multiple choice questions at the end of the course. To achieve the certificate candidates must get a minimum of 20 correct answers.
Award
Successful candidates receive the Chartered Institute of Environmental Health's Level 2 Award in Healthier Food and Special Diets certificate.
A course handbook will be issued to all course members.
