The Foundation Cookery Course

Working in groups of up six students, the day is spent learning about food and new flavours whilst practicing methods of cooking in the stunning Middle Farm House kitchen in the heart of the South West. After a morning of demonstration and practical sessions, you’re invited to enjoy a relaxed and informal lunch, followed by afternoon sessions preparing for dinner, giving you an insight into advanced food preparation, organizing the kitchen and presenting and serving a meal. At the end of the day, you can relax and enjoy the canapés you’ve made with a pre-dinner drink, or an evening’s wine lecture in front of a roaring fire during winter; or in the garden in summer.

The early stages of this intensive hands-on course will teach you classic methods and skills on how to make soups, sauces, pastry and cakes. As your knowledge and confidence develop, you’ll be taught more technical skills such as filleting fish and boning meat, and learning the art of producing delicious pastries such as croissant and brioche. You’ll also learn how to create your own store cupboard, including homemade jams, chutneys and vinegars, and whenever possible, local organic produce is used, accompanied by seasonal ingredients, with regular visits to local producers. A recipe file is also provided, together with a host of useful food charts and tips. Not only will you produce a wide variety of classic and modern dishes, but you’ll also prepare food for special diets. Students will be given tuition and examination for the Level 2 Food Safety in Catering whilst on the course.

Learning to plan, prepare, cook and serve a meal of your choice for a number of guests, whilst working to a budget, is an integral part of the course, encouraging you to test your own ability whilst professional and friendly advice is on hand. Upon completing the course, we can put you in touch with ski companies and employment agencies.
