You will need at least 4 GCSEs in the C-E range, preferably to include two at grade C or above or an appropriate Level 1 qualification such as a an Introductory Diploma in Professional
Cookery or a NVQ Level 1 or 2.

The theoretical units will provide you with a broad
understanding of all aspects of kitchen operations, essential for those aspiring to work in the industry.

The core units are:

· Investigate the hospitality and catering industry
· Food safety in catering
· Health and safety in catering
· Nutritional and special diets in catering
· Kitchen operations, costs and menu planning
· Applying workplace skills
· Prepare and cook sauces, soups and stocks
· Prepare and cook vegetables and pulses
· Prepare and cook meat and offal
· Prepare and cook poultry
· Prepare and cook shellfish
· Prepare and cook rice, pasta, grains and egg dishes
· Prepare and cook desserts and puddings
· Prepare and cook bakery products.

The optional units are selected by the College and may include:

· Bar service
· Table service.

You can also gain additional qualifications alongside your main
course, including Functional Skills as well as more specialist awards
relevant to your subject.

How will I be assessed?
Each unit is assessed by a combination of externally set
assignments and online multiple choice tests. Craft units are assessed by a series of practical assessments covering the range of different commodities.

On successful completion you may:

Progress to the NVQ Level 3 in Professional Cookery, the BTEC
National Diploma in Hospitality Supervision or the Advanced
Diploma in Hospitality.
