This course will introduce students to basic cookery and customer care skills and help develop good work and organisational practices. It is suitable for those who need to gain more confidence in their abilities to prepare and cook food and develop a professional aptitude. This course is designed to give you a basic understanding of catering and food service with applied knowledge and skills. You will be introduced to basic cookery and customer care skills with the opportunity to develop good working practices. You will work in the College’s well equipped kitchens and the College Brasserie /Restaurant. You will cover skills training in: meat & poultry, fish, dough’s, vegetables, cold prep, teamwork, counterservice, food safety. There is also an option to study extra level 1 units. Your study includes NVQ1 certificate in Hospitality Services and Essential Skills in Communication & Numeracy and ICT at the appropriate level. In addition, you will have the opportunity to study the level 2 Food Safety certificate. You will be continually assessed throught the course. Assessments take the form of practical observations in each unit and an underpinning knowledge test (multiple choice paper) per unit. Progression to: Professional Chefs Diploma; NVQ Level 2 Diploma in Professional Cookery; Employment; Apprenticeship Training.
