For anyone supervising staff, employing staff or running their own business, then progression to this course is strongly recommended. A supervisor has a legal and moral responsibility to look after the food hygiene standards of employees, but needs to have the knowledge and skill to be able to do this effectively. This programme provides an opportunity to look more deeply into food hygiene practices from a supervisory perspective and successful candidates will be able to help their organisation, whatever the size or activity, in improving hygiene standards. The aims of the course are: to provide understanding of the main concepts of food safety; to promote the benefits of hygiene culture; to clarify the roles and responsibilities of individuals, supervisors and management in food safety; to provide an understanding of food hygiene and food safety control and improvement strategies available to supervisors. This course replaces the Intermediate Certificate in Food Safety.

Final assessment is by means of a 60 question multi'choice examination lasting two hours. The exam is available in 3 disciplines: Catering, Manufacturing, Retail.
