About this course

NVQ2 (or equivalent) qualifications in Food Preparation & Cookery are required for applicants working full time in a catering position in a suitable workplace. An interview is required for the course.

Food Preparation and Cooking NVQ 3

Is this course right for me?

This course trains you to a high technical level, providing the skills to meet food production requirements of first-class hotels/restaurants. You will need to be employed in food preparation and have an NVQ 2 in food preparation or have experience.

What will I be learning?

This NVQ3 is made up of 16 units including: supervising health and safety, food hygiene, maintaining effective working relationships and a range of 'complex' food preparation & cookery skills including preparing and cooking meat, fish, poultry, vegetables, sauces, soups, pastry, bread and dough products and cold desserts. You will have theory sessions to develop knowledge and understanding and receive support in developing a portfolio of evidence. There will be written tests for each module.

How will I learn?

You will be continually assessed throughout the course by way of direct observation, oral questions, witness testimony, projects and written test questions for each unit.

What else might I want to know?

As part of your studies you will have practical kitchen sessions designed to develop skills and knowledge, these will be held in our modern, fully equipped training kitchens where all food produced will be utilised in our various catering outlets. You will need to provide your uniform and one set of knives.A text book may be recommended. This course is designed primarily for individuals already working in the catering industry at supervisory level. In some circumstances it is possible for those not currently working as supervisors to enrol and gain the qualification; this option will include extra assessment sessions in South Devon College food outlets and the food stores. Practical ability is also important as is support from the employer in presenting workplace evidence.

What can I do afterwards?

After this course you may be able to progress to higher level study by following a Foundation Degree programme in the vocational area.
