Course Content
You will study the following units which, when completed, will lead to NVQ qualifications at Level 3 in Professional Cookery (Preparation & Cooking) 3 generic (or compulsory) units which must be completed, these are:
· Positive Working Relationships
· Maintaining Health, Safety and
· Security Maintaining Safety in Storing, preparing & cooking of food You will also complete another 13 units from a choice of practical preparation and cooking areas, these are:
· Game, Meat & Poultry
· Healthier Dishes
· Fish & Shellfish
· Soups, Sauces and Dressings
· Vegetable, Pasta, Canapes and Cocktail Items
· Desserts, Dough Products, Cakes and Biscuits
· Chocolate, Pastillage, Marzipan and Sugar Items
· Controlling Resources, Developing Menus and Recipes

Progression
On completion of this programme, you may wish to progress on to employment in kitchens at high craft/level or onto a NVQ 4 in Management.
