Entry Requirements
An interest in home cooking and baking is essential, plus a willingness to learn new skills and techniques in a professional kitchen.

Course Duration
6 weeks - Tuesday evening.

Skills and Benefits
To learn the skills needed to produce a range of cookies, cakes and home bakes. You will be given an introduction to health and safety practices in our professional kitchen environment.

Mandatory Units
Week 1: Sponges Victoria sponge, fairy cakes, buttercreams and toppings Week 2: Chocolate Brownies, cookies and flourless chocolate cake Week 3: Pastry Tart cases, shortbread and choux pastry Week 4: Meringues and Macaroons Pavlova, Eton mess and macaroons Week 5: Afternoon teas, custards and jams Scones, battenburg, strawberry and champagne jam, creme pat/creme anglaise Week 6: Puddings and dessert Steamed pudding, apple pie or crumble

There are no optional units on this qualification.

Course Assessment
Your tutor will give you helpful advice, guidance and support throughout the course to improve taste, presentation and technique.
