Introduction Who Should Participate:
The Drink Service is aimed at bar-persons, cellar-persons and possibly bar supervisors across a wide range of catering or hospitality environments. It is also suitable for team members in a quick service environment. Employees will be confident in all aspects of food and drink service including: serving alcoholic and soft drinks, maintaining cellars and kegs, preparation and serving wines, preparing and serving cocktails and dealing with payments. Eight units must be completed for the full NVQ.
Course Units Each candidate must complete all the mandatory units, plus five optional units.
Mandatory units:
· Maintain a safe, hygienic and secure working environment
· Contribute to effective teamwork
· Give customers a positive impression of yourself and your organisation
· Maintain food safety when storing, holding and serving food
Optional units:
· Maintain food safety when storing, holding and serving food
· Prepare and clear areas for counter/takeaway service
· Provide a counter/takeaway service
· Maintain and deal with payments
· Prepare and clear the bar area
· Serve alcoholic and soft drinks
· Prepare and serve cocktails or wines
· Maintain cellars and kegs
· Clean drinks dispense lines
· Prepare and serve dispensed and instant hot drinks
· Prepare and serve hot drinks using specialist equipment
· Receive, store and issue drinks stock
· Prepare and clear areas for table service
· Serve food at the table
· Provide a silver service
· Provide a buffet/carvery service
Assessment:
The course is assessed through practical observations and a portfolio of evidence completed throughout the year
Course Outcome:
Participants will have achieved a nationally accredited NVQ Level 2 qualification in Food & Drink Service
Duration 9 months - 1 year
Tuition Fees(Cost) Costs dependent on funding options.
Progression Route NVQ Level 3 in Catering or employment in the industry
