Course Overview
This course is designed for Chefs, Cooks and Caterers 16+ year olds who wish to workin the Hotel and Catering Industry who require a recognised qualification.

Course Structure
This is a 2 year course with attendance on Tuesday, 9.00am - 5.30pm in the Pegwell Building. Initially students should meet in the Pegwell reception.
The course will cover practical cookery and the theory to underpin the practice including:

• Hygiene
• Health and safety
• Commodities
• Cookery methods

The course is one of continuous assessment by the course tutor.

Free tuition is available to those in receipt of certain means tested benefits or to their un-waged dependants. If you are not on benefits but find it difficult to pay any course related costs because of financial hardship, we may also be ableto help.
