This course is year one of a two year programme for students who would like to become professional chefs. Working as a chef can be creative, challenging and very rewarding. This course has been developed to enable you to gain a broad range of skills to equip you for working in a professional kitchen. Course programme
How will I study?
City and Guilds Level 1 Certificate in Hospitality and Catering Principles (professional cookery), Functional Skills in English and maths or GCSE resits, Barista qualification and Food Hygiene qualification. Working towards though not restricted to: preparing and cooking fish, eggs, meat, rice, pulses, cooking and finishing simple bread and dough products, providing a counter and takeaway service. If you are aged 16-18 you will follow a study programme consisting of your main qualification, English and maths.
How will I be taught?
Teaching will be predominantly in our realistic working environment.
How will I be assessed?
The units will be assessed using multiple choice tests and practical observations. Functional Skills will be assessed according to the requirements of the awarding bodies. Please note that a fee will be payable for any examinations which require resitting.
