Aim of course
To provide food industry professionals with a good working knowledge of food industry procedures, legislation and bacteriology, enabling them to manage food safety in their workplace.
What will the course involve?
A CIEH qualified instructor will deliver the course within the college. The course consists of a two and a half hour written exam and two three thousand word assignments to run concurrently with the course and which must be completed within four weeks of course start date. One of these assignments is compulsory on food management systems; the other is optional from a choice of subjects. Both must achieve 60% pass mark before the exam is taken; the exam is taken approximately one month after the end of the tuition period.

Bacteriology, food - borne illnesses, physical contamination of food, food storage, temperature control and preservation, design and construction of food premises and equipment, cleaning and disinfection, pest control, personal hygiene, training strategies , legislation and management control techniques (HACCP) in greater depth than at level 3
