This City and Guilds vocational qualification is proactive in addressing the needs of the individual and the industry. It offers the knowledge and practical skills necessary to achieve an industry recognised qualification and a career in food preparation and cooking.
The study units are:
Investigate the catering and hospitality industry;
Food Safety in Catering;
Health and Safety in Catering and Hospitality;
Healthier Foods and Special Diets;
Kitchen Operations, Costs and Menu Planning;
Applying Workplace Skills;
Prepare and Cook Stocks, Soups and Sauces;
Prepare and Cook Fruit and Vegetables;
Prepare and Cook Meat and Offal;
Prepare and Cook Poultry;
Prepare and Cook Fish and Shellfish;
Prepare and Cook Rice, Pasta, Grains and Egg Dishes;
Prepare and Cook Desserts and Puddings;
Prepare and Cook Bakery Products.
Assessment
The course is assessed by written assignments, short answer tests, an online test and two practical examinations.
Qualifications
A Level 1 Diploma in Professional Cookery at Merit or above or an equivalent Hospitality and Catering qualification.
Commitment, enthusiasm and the ability to work with others is essential.
