Professional Cookery Level 3 Diploma
This course provides the opportunity to further develop professional and supervisory techniques to an advance level. This course is suited for students who have completed the NVQ Level 2 in Food Preparation and Cooking, and who are working in a reputable establishment in the catering industry, to be able to extend their skills and knowledge. The NVQ Level 3 is aimed at learners wishing to progress their catering careers into junior management and is the equivalent to two A Levels.
Course Content:
The course will enhance the caterers skills to a new level to cover: Positive working relationships within the hospitality industry Maintain the health, hygiene, safety and security within the working environment Students will also learn how to prepare complex dishes including:
The course is broken down with one hours theory and five hours of practical.
Work Experience / Practical Experience:
Students must be working in a reptuable catering establishment.
Entry Requirements:
- Applicants will need to have completed the NVQ Level 2 in Professional Cookery, or the CIEH Level 2 Award in Food Safety in Catering (Basic) .
- Applicants are also required to be employed within a reptuable establishment .
Entry Process:
Applicants will be invited to attend an interview with the course tutor.
Assessment:
Ongoing assessment of practical skills will take place throughout the whole course at appropriate stages, supported with a diverse range of additional practical activities. There are formal examinations to test understanding of underpinning theory.
Progression Routes:
Students may wish to progress onto a higher education course such as the Foundation Degree programmes in Hospitality and Catering.
Career Options:
This course is particularly suited for those wishing to progress onto a Foundation Degree or aspire to be Senior Chef De Partie, senior Sous Chef or Development Chef.
