The aim of both the programme is to enable learners to attain the necessary skills to do well in this dynamic industry. Culinary and food service skills will be taught by practical lively demonstrations and hands-on experience will allow learners the opportunity to practice the skills they have learnt.
Previous knowledge required: Candidates require a genuine interest in food and customer care and the ability to succeed and have fun in a challenging environment. Acceptance to either level of this programme will be by interview and the outcomes of initial guidance. Applications from mature students, those working in the industry or those wishing to return to a hospitality related environment are particularly welcomed.
What will I study? These programmes are largely practical. Essential theory is generally taught using ICT. You will study 'Food and Drink Service' where you will develop those skills needed to work in a busy restaurant. In 'Food Preparation and Cooking' you will gain the basic culinary skills required by all aspiring chefs. We will help you develop your research skills to help you gain a thorough understanding of the hospitality sector and enable you to make informed decisions about your future career.
What else will I do? You will have the opportunity to work and be assessed in the college restaurant, and refectory, outside catering events and other real workplaces. You will also be able to achieve a variety of related subsidiary awards including key skills
How will I be assessed? There will be a combination of practical assessments and assignments across the year some of which will be carried out in real working situations.
What will I achieve? L1 City and Guilds NVQ Multi-Skilled Hospitality Certificate. CIEH L2 Award in Food Safety. HSE Emergency First Aid Certificate. A range of key skills at level 1 and 2.
What can I do afterwards? The NVQ provides an excellent foundation for those wishing to progress into a career in the hospitality industry locally, nationally or internationally. Alternatively, after completing the NVQ you might choose to progress to the L2 NVQ Multi-skilled Hospitality or the L1 VRQ Diploma in Professional Cookery.
Materials required: You will need to buy two sets of chefs whites, restaurant uniform, knife set and two text books.
