This course is an introduction to sharpening English and French edge paring knives and a spoke-shave blade.
You will learn about the different sharpening systems available and their advantages and disadvantages.
This course will take the mystery out of freehand knife sharpening and explain everything in simple steps.

About this course
- Understand different sharpening systems
- Understand a grit chart
- Flatten a Japanese water-stone
- Use a strop effectively.
Please bring paring knives and spoke-shaves that you would like to sharpen as well as any sharpening stones and strops you have. It would be helpful to bring along a notebook and pencil.
