This course is an introduction to sharpening English and French edge paring knives and a spoke-shave blade.
You will learn about the different sharpening systems available and their advantages and disadvantages.
This course will take the mystery out of freehand knife sharpening and explain everything in simple steps.

Please bring paring knives and spoke-shaves that you would like to sharpen as well as any sharpening stones and strops you have. It would be helpful to bring along a notebook and pencil.

Course programme

- You will learn about the three stages of sharpening.
- About the bevel side and the flat side of a knife.
- Working with knives in a safe and controlled manner
- Spoke-shaves, how they work, their parts and how to optimize them for paring leather
- Strops and their importance.

You will be taught by practical demonstrations supported by individual tuition and handouts. As this is an introduction to knife sharpening, you will learn to sharpen proficiently as you put into practice the techniques shown in the course.
