Level 2 Award in Food Safety in Catering

Food HygieneThe certificate is recognised nationally and is a basic level qualification required to work in the food trade, and complies with the training required by our food safety legislation. The course itself is run to the Chartered Institute of Environmental Health standard and takes one whole day to conclude.

Course Content and Learning Objectives :

  • Introduction to Food Safety - To understand the terminology used in food safety and the consequences of poor standards including the likelihood of causing food poisoning.
  • The Law - To understand the laws that apply to food businesses and food handlers.
  • Food Safety Hazards - To appreciate what constitutes a food hazard and how to contain the risk of food poisoning.
  • Taking Temperatures - To understand how to take product and equipment temperatures.
  • Refrigeration, Chilling and Cold Holding of Food - Understand how the reduction in storage temperature will minimise bacterial multiplication.
  • Cooking, Hot Holding and Reheating of Foods - To understand the role of heat in producing safe food.
  • Food Handlers - To understand what is expected of you as a food handler.
  • Principles of Safe Food Storage - To understand the importance of appropriate storage conditions.
  • Cleaning - To understand the importance of effective cleaning.
  • Food Premises and Equipment - To recognise the suitability of structures and equipment for use in a food business.

The course will conclude with a multiple choice type examination which requires candidates to correctly answer at least 20 out of 30 questions to be awarded the qualification.

Courses are conducted in English although Cantonese and Bengali sessions are accommodated. In addition, the short exam can be taken by oral test where necessary.
