Course description
This is a part time course that runs alongside a full time VRQ Diploma or NVQ Professional Cookery course and excellent career links are available with both local and National Industry. This course is also delivered as a one day a week course for students that work in the Food and Drink Industry.
This course is a City & Guilds Level 2 NVQ in Food and Drink Service where you will work in a realistic working environment within the Waterfront Restaurant and Conference Centre serving a variety of food and drink to high Industry standards
Course Structure
An Induction/Taster course will be completed initially (BII Essentials of Catering) for all students that will be completing the full time programme.
Week one - Part time students will have an induction to the restaurant lecturers and operating procedures.
You will then attend college one day a week and the day will be agreed between yourself and the lecturer. You will work in the restaurant every week providing high quality food and drink service, conferencing and special events. Theory will be delivered during these sessions.
The course covers the following mandatory units:
Maintain a safe hygienic, and secure working environment
Contribute to effective team work
Give customers a positive impression of yourself and your organisation
Plus at least 4 from the following list:
- Prepare and clear areas for counter/takeaway service
- Provide a counter/ takeaway service
- Prepare and clear areas for table service
- Serve food at the table
- Provide a silver service
- Provide a buffet/carvery service
- Prepare and clear the bar area
- Serve alcoholic and soft drinks
- Prepare and serve cocktails
- Prepare and serve bottled wines
- Prepare cellars and kegs
- Clean drinks dispense lines
- Prepare and serve dispensed and instant hot drinks
- Prepare and serve hot drinks using specialist equipment
- Receive, store and issue drinks stock
- Maintain and deal with payments
For all full time students there is a compulsory list of units. For part time students the most relevant units will be selected to suit your place of work and daily duties.
