Suitable For

This course is designed for those who are currently employed in the industry and those wishing to take up a career in food service to a supervisory or management level.

Course Content
The programme is practically based with additional theoretical support. The course aims to give experience, guidance and practice in high quality food service skills in the realistic working environment provided at the College. Subjects studied include:

  • Customer care

  • Quality control

  • Styles of service (including gueridon and silver service)

  • Hot and cold beverage service

  • Managing a function

  • Menu planning and production

  • Employment opportunities

  • Legislation

Method of Assessment

NVQs are competence-based qualifications that may be gained at College or in industry. Practical skills are continually assessed in the college realistic working environment. Underpinning knowledge is assessed by means of on-line testing. Completed portfolios are assessed by College tutors and submitted to the External Verifier appointed by the Hospitality Awarding Body (HAB).

Progression

Students can generally work at their own speed but should be able to complete comfortably within two years.
