Level 2 Food Safety In Catering Award
West Kent College is pleased to offer this course in partnership with Environmental Health departments of Tonbridge & Malling Borough Council, Tunbridge Wells Borough Council and Sevenoaks District Council. This partnership provides the latest training with those directly responsible for environmental health. All training is delivered by specialist and fully qualified trainers who have commercial experience of the food industry and environmental health. The qualification is designed for anyone working in a catering setting where food is prepared, cooked and handled. Typical environments may include:
  • Pubs, hotels and restaurants
  • Hospitals
  • Care homes
  • Schools
  • Prisons
  • The qualification has been developed to address the new national occupational standards (statements of the skills, knowledge and understanding expected from employees) in food safety and the recent changes in food safety legislation. Learners successfully completing this qualification will possess:
    • A firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved
    • Understanding of how to control food safety risks (personal hygiene, food storage, cooking and handling)
    • Confidence and expertise to safely deliver quality food to customers
    Refreshment of this qualification is recommended at least every three years.

    Course Content:
    The course places a strong emphasis on the 4 Cs: Cleaning, Cooking, Cross contamination and Chilling. Monitoring controls, corrective actions and methods of reporting are examined as part of a food safety management system. The course will cover the following main topics:
    • Legislation
    • Food safety hazards
    • Temperature control
    • Refrigeration, chilling and cold holding
    • Cooking, hot holding and reheating
    • Food handling
    • Principles of safe food storage
    • Cleaning
    • Food premises and equipment
    Special arrangements to support candidates with learning difficulties can be made, although we do ask that you make the College aware of any special requirements prior to booking a place on the course. Support may also be available for candidates for whom English is not their first language. Again, we would ask that this be discussed before a place is booked. Courses are held at various venues in the local community. Each course is 9am-5pm.

      Entry Process:
      There is no interview required.

      Assessment:
      The course is assessed through a multiple-choice examination at the end of study.

      Progression Routes:
      Upon successful completion of the Level 2 Award in Food Safety and Catering, learners may progress to the Level 3 Award in Supervising Food Safety in Catering.
