Content
You will study Food Preparation and Cooking NVQ 2 and Serving Food and Drink NVQ 2. The course develops the craft skills required for employment in a service industry. Practical skills will be gained in the commercial kitchens and the public restaurant and diner.
Cooking units on the course will deal with:
Hygiene, Working with Others, Health and Safety, Preparing and Cooking Meat, Fish, Vegetables, Soups, Sauces, Pasta, Rice, Eggs, Pastry Items and Dough Products.
Service units on the course can deal with:
Preparing Dining Areas, Serving Customers, Customer Care, Dealing with Payments, Providing a wine service and Silver Service techniques.
Key Skills will also form part of your final qualifications.
Assessment
Practical skills are assessed through a series of observations. Theory knowledge is tested with short exams set by the awarding body after relevant instruction in theory sessions. These methods of assessments apply to both Food Service and Food Preparation qualifications
Progression
This course will prepare you for entry into employment locally, nationally or internationally of for further study such as Advance Craft Skills or Hospitality Supervisory Skills at Level 3.
Additional Information
Students will need to purchase professional uniform and wear safety shoes or boots in the kitchens. They will also need knives and textbooks. Detailed uniform lists and prices are available at interview.
Work Experience The Catering area prides itself on its high standards shown in the public restaurant. Students compete in regional and national competitions and suitable work experience is arranged for students at events such as Cheltenham and Ascot Racecourse.
